Since I found out I have PCOS, I have somewhat adjusted what I put in my body because eating healthy helps women with PCOS and it also helps balance out hormones, which I’m trying to do naturally without being on birth control.

With that being said, I want to share my new favorite meals I have been making with y’all, especially since boosting our immune system is so important during this time because we don’t want to get sick! I know it’s easier to reach for the snacks that are filled with so much sugar and easy meals that may not be healthy for you, but boosting your immune system should be your number one priority right now!

Here are 5 meals/snacks I have been loving!

Quinoa with Cinnamon Apples & Pecans

This is so delicious! I actually discovered this recipe on Pinterest! I followed the recipe that I linked and I added the pecans after the mixture of the quinoa and cinnamon apples were fully cooked. Then, I added a little bit of honey on top of it! You can have this for breakfast, which this was my first time having quinoa for breakfast because I think of quinoa as a meal for lunch and dinner!

Chocolate Chia Seed Pudding with Strawberries

This one is one of my favorites! You can find tons of chia seed pudding recipes on Pinterest and I kinda just made my own recipe for this, but I don’t have the exact measurements (sorry!) You just put in some chia seeds in a bowl, add some milk (I do almond milk) – I add just a little bit where it covers the entire bottom of the bowl, but not too much because you want the pudding to be thick! Then, I add some cocoa powder to it – probably about 1 spoonful. I mix everything together until I can’t see any of the powder and then, I put it in the fridge for 30 minutes or when it gets thick! Add some chocolate chips and strawberries to it and enjoy! This chia seed pudding is so good! Chia seeds are rich in fiber and they have omega 3 in them. Omega 3 is great for women who have PCOS because it lowers inflammation, lowers testosterone levels, helps with anxiety, etc. I also put chia seeds when I have oatmeal! Anyways, you can have this chocolate chia seed pudding for a snack or even for breakfast – you can prep it at night and then, have it in the morning!

Green Smoothie (Pineapple and Cucumber Smoothie)

This is so delicious! I cut up some cucumber into slice and add about 8 slices, some frozen pineapple, a mixture of frozen kale and spinach, flax seeds, water (enough that it won’t be too watery), and some honey into the blender and mix all of it up! Everything in this smoothie is going to boost your immune system, especially the kale and spinach! It’s honestly pretty good and you don’t taste the kale or spinach in it, only the cucumber and pineapple! You can have this smoothie for a snack or even for breakfast!

Quinoa with Black Beans And Corn

Ok… this one is so delicious (I know I have said this for the others, but this one is soo yummy!) One day, I felt like combining all of this together, so I didn’t go off of a recipe!

I put 1 cup of quinoa in a pan and put 1 cup of water in it. I let it boil until all the water evaporated. Then, I seasoned the quinoa and you can add any season you want to it. Next, I got 1 can of black beans, drained it and added it to the quinoa. I did the same thing for the corn! I mixed everything together, put some in a bowl, I added some Maries Avocado Poblano dressing to it (so good), some salsa, and avocado. Lastly, I added some black bean chips on the side (it’s the Food Should Taste Good brand, but any tortilla chips will work). I love to dip the chips into this quinoa mixture! I also have a huge thing of hot peppermint tea with lemon and honey in the picture shown above!

Garlicky Kale With ChickPeas and Red Bell Pepper

I have also been loving this recipe!

First, you cut 1 thing of red bell pepper and put it in a pan on the stove. Also, add some garlic to it and a little bit of olive oil (I use garlic that is already chopped up in a jar) and let everything saute’. Then, drain 1 can of chickpeas, rinse them, and put them in with the red bell pepper and garlic. Cook the chickpeas until they look golden and I also add garlic salt to them. Once the chickpeas are golden, I add in a bunch of kale and let everything cook while mixing it all together. The kale should start to shrivel up (how it looks in the picture).

While the kale is cooking, I make this dressing for it:

I’m so bad, I really don’t use measurements for this, but you will need…

Olive oil

Dijon mustard

Honey

Pepper

Mix all of it in a container and you have your dressing! It tastes like honey mustard!

Lastly, I make the sweet potatoes – I cut 1 sweet potato into pieces, put them on a baking sheet, add olive oil, some garlic salt, and pepper to the sweet potatoes. Cook them for 30 minutes (or less, depends on your oven) for 450 degrees!

You can have this meal for dinner or even for lunch! It makes a lot and I have also made this with using two cans of chickpeas and it has lasted me for awhile!
